Mochi Barley Breakfast Delight

Holiday celebrations are here and that often means we are over indulging. Here is an easy breakfast recipe that will keep you full, satisfied and on the right health path. After all, we all know how important breakfast is.

Serves: 10

1½ cups water
1 cup apple juice
2 cups Mochi Barley
1 tsp cinnamon
½ tsp nutmeg
½ cup almonds
½ cup chopped dried apricots

Directions:
1. Combine water and apple juice and bring to a boil in a heavy, medium-sized saucepan.

2. Add Mochi Barley, all dry fruits, and spices. Reduce heat and simmer for 15 minutes( yes, Mochi Barley does it in 10), stirring occasionally.

3. Add slivered almonds and cook for another 5 minutes.

4. Remove from heat and serve with yogurt.

This recipe could be made ahead of up to 3 days time. Keep fresh in the refrigerator and can be warmed up in the microwave.
